Is there a device that will convert CAT6 cable to coaxial cable then back again? Could I do this with two cable modems?

I don't think so. A Cable Modem on the Coaxial side looks for a DHCP server to give it an IP Address. Without that DHCP server it probably wouldn't connect to anything, even another modem. I'm not aware of a way to give the coaxial side a static IP and even if you could, I would doubt the firmware in the modems is sophisticated enough to support a network on it's own.

I'm not saying it can't be done but I don't know of a way to do it.

i dont believe there is a way to connect rg6 to cat6 but (long reach ethernet) may be what your looking for.
